Noêma was born from a simple yet profound idea — that every meal should carry meaning. After a decade cooking in Michelin-starred kitchens across Europe, I saw that what truly matters isn’t just technique or ingredients, but the moments created when people come together to share food.
Inspired by the Greek word noêma (meaning «thought» or «essence»), our approach combines the soul of Mediterranean hospitality with the Nordic appreciation for quality and simplicity.

Panagiotis Lenakis
Executive Chef & Founder
Born and raised in the vibrant city of Athens, Greece, Panagiotis developed a deep passion for food from an early age. His path was clear: after completing his education at the esteemed culinary institute of Athens, he embarked on a journey that has taken him across the world. Over the course of more than 12 years, he has refined his craft in some of the world’s most exciting and prestigious kitchens, including the renowned three-Michelin-starred Restaurant Maaemo in Oslo, celebrated for its innovative take on Nordic cuisine and meticulous attention to seasonal ingredients, as well as the one-Michelin-starred Restaurant Kontrast, where modern Scandinavian techniques meet sustainable, locally sourced ingredients. Alongside his Michelin-starred experience, Panagiotis has thrived in fine dining establishments and traditional eateries, mastering a broad spectrum of culinary techniques and styles.
